Mini Peach & Ash Brie Tarts

Peach season is here, and we’re celebrating with something sweet, creamy, and oh-so-good.


Ingredients

  • 1 sheet puff pastry

  • 2 Pears, thinly sliced

  • 1 x 125g Ash Brie, cut into thin strips

  • 1 egg

  • 1 tbsp brown sugar

  • 2 tbsp honey

  • 2 tsp thyme

  • 1 tsp lemon juice

Method

  1. Preheat the oven to 200°C. Line a baking sheet with parchment paper, and set aside

  2. Cut one sheet of puff pastry into quarters to create 4 squares

  3. Lightly score the pastry dough, roughly 1-2cm from the edge to create a border along inside the pastry square. Make sure to not cut all the way through. This will help the edges rise when baking

  4. Slice the ash brie into thin strips, and place 2-3 slices of brie over each square

  5. Arrange 2-4 slices of peach over the brie

  6. Beat egg and 2 tbsp of water in a small dish to create egg wash

  7. Brush the edges of the puff pastry with egg wash and sprinkle edges with brown sugar

  8. Bake the tarts for 18-20 minutes, or until the pastry appears golden and crisp

  9. While the tarts are baking, combine honey, thyme, and lemon juice in a small bowl. Drizzle tarts with honey syrup before serving, and enjoy!
