Festive Cranberry-Camembert Log

Bring on the holiday cheer with our Cranberry-Brie Log, ready to steal the spotlight this festive season.


Ingredients

  • 1 sheet puff pastry

  • 1 x 125g Lactose Free Camembert, cut into thin strips

  • Approx. 1/2 cup of fresh or dried cranberries

  • Approx. 1/4 cup pomegranate seeds

  • 1 egg

  • 2 tbsp honey

  • 2 tsp fresh thyme

Method

  1. Preheat the oven to 200°C. Line a baking sheet with parchment paper

  2. Cut the lactose free camembert cheese into thin strips and place on one half of the pastry sheet

  3. Sprinkle the cranberries over the lactose free camembert cheese

  4. Roll the pastry sheet over the filling to form a log, leaving about 7–8 cm unrolled. Brush the exposed edge with egg wash, then finish rolling to seal

  5. Brush the outside of the pastry log with the beaten egg to give them a golden, glossy finish

  6. Slice the log into strips, roughly 5cm wide

  7. Bake for 15-20 minutes, or until the pastry is golden brown

  8. In a small saucepan, heat the honey with the thyme for 2-3 minutes

  9. Drizzle the infused honey over the warm pastry log and sprinkle with pomegranate seeds on top for a festive touch
