Chilli Brie, Potato & Cranberry Smash

Spice up any celebrations with our chilli take on Brie & Cranberry Smashed Roast Potatoes!

Ingredients

  • 1 x 125g Unicorn Cheese Chilli Brie (Available Coles supermarkets)

  • Baby potatoes

  • Cranberry sauce

  • Fresh thyme

  • Olive oil

  • Sea salt for seasoning

  • Muffin tin (or mini muffin tin)

Method

  1. Preheat oven to 200°C

  2. Boil your potatoes for approx. 15 mins (or until tender). Drain and set aside to cool

  3. Grease your muffin tin with olive oil

  4. When potatoes have cooled down, cut them in half and arrange 1/2 per muffin hole with skin side down

  5. Use a spoon to press down and mush the potato in the muffin hole

  6. Brush each potato with olive oil

  7. Sprinkle with sea salt

  8. Place in the oven for 30mins or until golden

  9. While the potatoes are roasting, slice your wheel of chilli brie into wedges

  10. Once your potatoes look golden remove them from the oven, allow to cool and remove from muffin tin onto a baking tray

  11. Place a wedge of brie on each potato

  12. Top with cranberry sauce and a sprinkle of fresh thyme

  13. Return to oven and roast for another 5mins until the brie is soft and gooey and the potatoes are warm.
