Chilli Brie, Potato & Cranberry Smash

Spice up any celebrations with our chilli take on Brie & Cranberry Smashed Roast Potatoes!

Ingredients

  • 125g Unicorn Cheese Chilli Brie (Available Coles supermarkets)

  • Baby or cocktail potatoes (6 for a 12 hole muffin tin etc.)

  • Cranberry sauce

  • Fresh thyme

  • Olive oil

  • Sea salt, chilli flakes for seasoning

  • Muffin tin (or mini muffin tin)

Method

  1. Preheat oven to 200C

  2. Boil your potatoes for approx. 15 mins (or until tender to prick with a fork). Drain and set aside to cool

  3. Grease your muffin tin with olive oil

  4. When potatoes have cooled, cut in half and arrange 1/2 per muffin hole with skin side down

  5. Use a spoon to press down and smash the potato in the muffin hole

  6. Brush each potato with olive oil

  7. Sprinkle generously with sea salt, chilli flakes

  8. Place in the oven for 30 mins or until golden

  9. While the potatoes are roasting, slice your wheel of chilli brie into wedges

  10. Once 30 mins is up and your potatoes look nice and golden remove from oven, allow to cool slightly and remove from muffin tin onto a baking tray

  11. Place a wedge of cheese on each potato smash

  12. Top with a dollop of cranberry sauce and a sprinkle of fresh thyme

  13. Return to oven and roast for another 5 mins until the brie is soft and gooey and the potatoes are warm.
