Brie-day Cake
The sweetest and savouriest birthday cake for your next celebration.
Ingredients
2 x 125g wheels Triple Cream Brie
1/4 cup softened cream cheese
2 tbsp fig spread
1/4 cup chopped pistachios
To garnish: chopped pistachios, dried oranges, honeycomb, rosemary, fresh berries and a drizzle of honey
Method
Add one wheel of brie (cubed) to a food processor with the softened cream cheese and blend until completely smooth.
Transfer to a bowl, then fold in the fig spread and half the pistachios.
Slice the second wheel of brie horizontally. Spread a generous layer of the whipped brie mixture over the bottom half, then place the top back on.
Cover the top with the remaining whipped brie.
Finish with pistachios, dried orange slices, honeycomb and a drizzle of honey. Add rosemary, berries and a fresh baguette to serve.
